Verification

Verification covers the activities, distinct from monitoring, that confirm the HACCP plan is being followed and remains effective.

Verification activities

Calibrating monitoring equipment, reviewing records, internal audits of the plan and, where applicable, verification microbiological testing.

Validating the HACCP plan

Initial and periodic confirmation that the plan's elements (critical limits, CCPs) are actually capable of controlling the identified hazards.

Verification frequency

A verification frequency proportional to risk is defined, and the whole plan is reviewed after any significant change.

  • A record of the plan's initial and periodic validation
